Vanilla Rugelach Recipe
Prep time: 2 hours
Cook time: 15 minutes
Total time: 2 hours 15 minutes
Serves: 96 pieces
Ingredients
Dough:
- 2 packets (4½ tsp.) dry yeast
- ½ cup warm water (90 to 110°F)
- 1 tablespoon sugar
- 4½ cups all-purpose flour
- ½ cup vegetable oil or margarine, melted and cooled
- ¾ cup soy milk
- ½ cup sugar
- 2 eggs
- 1 teaspoon salt
Filling:
- ¾ cup margarine, melted
- 1½ cups sugar
- ¼ cup vanilla sugar from vanilla beans
Glaze:
- ¼ cup apple jelly
- ¼ cup water
Instructions
Dough:
- In the bowl of an electric stand mixer fitted with the dough hook, combine the dry yeast, warm water, and sugar. Whisk to remove any lumps and let the mixture stand for 5-10 minutes until it becomes foamy and bubbly. If it doesn't proof (foam up), discard and start with fresh yeast.
- Once the yeast is active, add in 4 cups of flour, the melted vegetable oil or margarine, soy milk, sugar, eggs, and salt.
- Mix on low speed until the dough comes together and is smooth, about 5 minutes.
- Once the dough is ready, form it into a ball, rub oil over the dough, and place it in a clean, oiled bowl. Cover with a kitchen towel and let it rise in a warm place for about an hour or until doubled in size.
- After the dough has risen, divide it into 6 pieces and work with one piece at a time.
Filling:
- Melt the margarine and set it aside.
- In a small bowl, combine the sugars and set aside.
- On a lightly floured surface, roll out one piece of dough into a thin round shape.
- Using a pastry brush, spread a thin layer of melted margarine over the entire dough round.
- Sprinkle the sugar mixture evenly over the dough.
- Using a pizza cutter, cut the dough into 16 wedges.
- Starting from the widest part of each wedge, roll each piece up tightly, forming a crescent shape.
- Transfer the rugelach to a parchment-lined baking sheet, ensuring the end of each roll is tucked underneath to prevent them from unrolling while baking. Place the rugelach close together on the sheet.
- Cover the baking sheet with a clean kitchen towel and allow the rugelach to rise in a warm place for 30 minutes to 1 hour.
Baking and Glaze:
- Preheat your oven to 350°F (175°C). Bake the rugelach for 15-20 minutes, or until golden brown.
- While the rugelach is baking, prepare the glaze. In a small pot, combine the apple jelly and water. Heat over low heat until the jelly melts completely.
- Once the rugelach is out of the oven, immediately use a heatproof pastry brush to apply the glaze over each piece.
- Allow the rugelach to cool on the baking tray before enjoying!
Conclusion:
These Vanilla Rugelach are a perfect combination of flaky dough, sweet filling, and a glossy finish, with the subtle richness of vanilla elevating the traditional recipe. Whether you're looking for a holiday treat, a special dessert for guests, or simply a sweet indulgence for yourself, this recipe will surely impress. Enjoy the magic of vanilla in every bite!
