The Creme Brulee That Makes Pumpkin Spice Feel Elegant Again

Pumpkin spice gets treated as a shortcut flavor most of the year, but in a proper creme brulee, built around a real vanilla bean, it becomes something closer to refined. This is pumpkin spice for people who think they're tired of pumpkin spice.

Ingredients (Makes 6 Ramekins)

  • 2 cups heavy cream
  • 1 AayuLuxe Grade A Vanilla Bean, split and seeds scraped
  • ½ cup pumpkin purée (not pumpkin pie filling)
  • 5 egg yolks
  • ⅓ cup granulated sugar, plus extra for the tops
  • ½ tsp ground cinnamon
  • ¼ tsp ground ginger
  • Pinch of ground clove
  • Pinch of salt

Instructions

  1. Preheat the oven to 150°C (300°F). Arrange six ramekins in a deep baking dish.

  2. Heat the cream with the scraped vanilla bean seeds and pod in a saucepan over medium heat until just simmering. Remove from heat, cover, and let steep for 10 minutes. Discard the pod.

  3. Whisk the pumpkin purée, egg yolks, sugar, cinnamon, ginger, clove, and salt together in a bowl until smooth.

  4. Slowly pour the warm cream into the egg mixture, whisking constantly to avoid scrambling the eggs.

  1. Strain the mixture through a fine sieve, then divide evenly among the ramekins.

  2. Fill the baking dish with hot water halfway up the sides of the ramekins.

  3. Bake for 40–45 minutes, until the edges are set but the centers still jiggle slightly.

  4. Remove from the water bath, cool to room temperature, then chill for at least 2 hours.

  5. Just before serving, sprinkle a thin, even layer of sugar over each custard and caramelize with a kitchen torch (or under a broiler) until deep golden and crackling.
