Key aspects of the vanilla curing process:
- Killing: The process starts by heating the beans (130-150°F) to stop growth and trigger enzymatic reactions that create vanillin.
- Sweating/Fermentation: Beans are stored in airtight, heated, and humid environments for 1–2 weeks, allowing them to become moist and develop their characteristic aroma.
- Drying: Beans are slowly dried, alternating with sweating, over 4–6 weeks to prevent mold while reducing moisture levels.
- Conditioning (Maturation): The final step involves storing the beans for several months to allow the flavor to fully mature and stabilize.
This labor-intensive process is crucial, as green beans have no market value or aroma until they are cured.
What is Sweating?
Sweating is a critical, intermediate stage in curing vanilla beans where, after being blanched in hot water, the beans are wrapped in cloth and kept in warm, airtight containers (boxes) for 24–72 hours. This process triggers enzymatic reactions that convert vanillin, darken the beans from green to black, and reduce moisture content by ~50%.

We believe that sweating is a critical, 2–14 day curing phase where hot, blanched green vanilla beans are wrapped in cloth/wool and stored in warm, sealed, dark, insulated containers or boxes. This process, maintaining temperatures around 40-45°C (113-115°F), triggers enzymes to convert glucovanillin into aromatic vanillin, turning beans brown and supple while reducing moisture.
Key Details of the Sweating Process:
- Purpose: Initiates fermentation, develops the aroma and color (from green to dark brown), and reduces moisture content.
- Temperature & Environment: High, consistent heat (ideally 115°F/40-45°C) is required, often achieved using insulated wooden boxes or blankets.
- Timing: The initial sweat lasts 24–48 hours to several days, followed by daily or weekly cycles of drying (sun) and re-sweating (boxes).
- Technique: After dipping in hot water ($\sim$150°F-160°F), beans are immediately wrapped tightly to trap heat and steam, preventing mold.
- Duration: While sweating itself takes several days, the entire curing process, including daily drying/rolling, can last up to 2 months before final conditioning.
