The Silkiest Panna Cotta Starts With Real Vanilla

Panna cotta is one of those desserts that looks elaborate but is surprisingly simple to make. The key is keeping the texture silky and letting real vanilla carry the flavor. Using a whole vanilla bean gives the cream a deeper aroma and those little vanilla seeds throughout the finished dessert.

Ingredients

·         2 cups heavy cream

·         1/2 cup whole milk

·         1/3 cup granulated sugar

·         1 AayuLuxe vanilla bean

·         2 1/4 teaspoons unflavored powdered gelatin

·         3 tablespoons cold water

·         Pinch of salt

·         Fresh berries or fruit, for serving

Instructions

1. Place the cold water in a small bowl and sprinkle the gelatin evenly over it. Let it stand for 5–10 minutes to bloom.

2. Split the vanilla bean lengthwise and scrape out the seeds.

3. Add the heavy cream, milk, sugar, vanilla seeds, vanilla pod and salt to a saucepan. Warm over medium-low heat until steaming and the sugar has dissolved. Do not let the mixture boil.

4. Remove the saucepan from the heat. Take out the vanilla pod and whisk in the bloomed gelatin until completely dissolved.

5. Divide the mixture among 5–6 small ramekins or glasses.

6. Refrigerate for at least 4 hours, or until fully set.

7. Serve chilled with fresh berries or another light fruit topping.

Recipe Tips

·         Do not boil the cream mixture; gentle heating helps preserve its delicate flavor.

·         For an especially smooth panna cotta, strain the mixture before pouring it into the serving dishes.

·         If unmolding, briefly dip the bottom of each ramekin in warm water before turning it onto a plate.
